A quick and simple glaze to decorate a cheesecake with, inspired by German Tortenguss.
2 tablespoons cornstarch
250ml juice of your choice – I usually go for something red or purple
- Whisk the corn starch into the juice and heat over a medium heat. Stir continually to prevent it going lumpy. Pour over a cheesecake and put in the fridge to set.
- Passion fruit always makes a lovely topping. You could make this with two passionfruit and enough juice to make up 250ml. (You could use orange juice if you can’t find passion fruit juice. It often comes blended with orange juice anyway.)
- Last time I made this, I didn’t have any juice so I used water, food colouring and sugar instead. It was fine.
