Salted Caramel

Lovely to spread over a cheesecake, add to brownies, have with ice cream or just eat with a spoon.


125g brown sugar

62.5g butter

50ml cream, double or single

a pinch of sea salt

  1. Melt the sugar in 5 tablespoons of water over a medium heat. Stir in the butter.
  2. Turn off the heat and stir in the cream and salt.
  3. Put in a jar and keep in the fridge. Eat spoonfuls of it out of the jar when life gets too much.
