Anzac Cookies

Anzac stands for Australia and New Zealand Army Corps. These cookies were made and sent to the troops overseas serving in Gallipoli as they keep well and hence survived postage. This makes about 15 cookies.

125g plain flour

125g oats

125g granulated sugar

100g butter

90g desiccated coconut

2 tablespoons golden syrup

4 – 6 tablespoons warm water

1/2 teaspoon baking soda

  1. Pre-heat your oven to 150C. Mix all the dry ingredients. Melt the butter and golden syrup together over a low heat in a saucepan.
  2. Add the butter and syrup mixture to the dry ingredients, followed by the water (don’t add it all at once – you may not need it all). The dough should come together nicely; it shouldn’t be dry or sticky. (Don’t be afraid to add a little more water if needed.)
  3. Put tablespoon sized lumps of dough onto greased trays and flatten slightly. Bake for 14 minutes. (Precise, I know but 14 minutes seemed just right in my oven!)
