Failed Cakes

If your cake falls apart, there are a number of things you can do.

If you feel too fed up to tackle it, just freeze it and you can do something with it another day. Here are my ideas:

  1. Make a tiramisu.
  2. Make a trifle.
  3. Crumble the cake up, toast briefly in a warm oven and use the crumbs as a cheesecake base or in a fridge cake.

For a tiramisu, put slices of cake in the bottom of a baking dish, and cover with half a mug of black coffee. Mix a tub of mascarpone with some custard (half of the quantity used for the fraisier – or just buy a tin) and spread over the cake. Whip a 330ml carton of cream and finish off by dusting with cocoa powder.

For trifle, line a bowl with pieces of cake and make a batch of vegetarian jelly, following the instructions on the packet. Cover the cake with the jelly and leave to set. Add layers of fruit, custard and whipped cream. I am reluctant to start dictating trifle recipes as many families have their own!
